American Idol winner Scotty McCreery was in New York this morning to tape an appearance on NBC's The Today Show, but the 17-year-old country-rican (yes, he's one fourth Puerto Rican and proud of it!), took a few minutes out of his busy schedule to chat exclusively with Latina.com about his Latino roots, whether he would consider recording a country album in Spanish, and why he can't salsa to save his life. Then, he showed us his favorite dance move...the sprinkler!

Known as “El Caballero de la Salsa” (The Gentleman of Salsa), Puerto Rican singer Gilberto Santa Rosa has been lauded for his improvisational skill on the mic ever since he started in the mid-‘80s. Fast forward twenty-plus years later and the suave crooner is still showcasing his lyrical dexterity, and nowadays he’s doing it without his trademark mustache. Yes, he shaved off the Tom Selleck–like 'stash for his upcoming 25th album, Irrepetible (out June 29; Sony Records).

British grandmother Paddy Jones, 75, stole the show on Spain's equivalent of America's Got Talent, Tú Sí Que Vales. When she steps on to the stage you can see the judges doubting the fact that this older woman could possibly be capable of performing a convincing salsa acrobatica, but boy does she prove them wrong! Appearing on stage with a partner 40 years her junior, Jones proceeded to execute a series of thrilling flips, turns and whirls that most would find downright impossible at any age.

Ralph Mercado recently passed away after battling cancer for two years. He was 67 years old. Mercado is known as one of the pioneering promoters of Salsa music and has worked with such renowned acts as Marc Anthony, La India and Domingo Quiñones.

1/2 cup thinly sliced white onion
1 cup fresh orange juice
1 cup fresh lime juice
1 fresh jalapeno chile, sliced, including seeds
2 tablespoons kosher salt
24 medium sea scallops (1 1/4 lb), tough muscles removed from sides if necessary and scallops halved horizontally
For pasta cakes:
6 oz black (squid ink) angels hair pasta
1 teaspoon extra-virgin olive oil
About 1 cup olive or vegetable oil
