If you've ever celebrated a holiday just for the sake of, well, celebrating, today's your day. It's National Tortilla Chip Day, and we can't think of anything else we'd rather celebrate than the crunchy companion that goes so perfectly with our guacamole, salsas, dips, and below that cheesy beef-and-jalapeno nacho recipe we just can't seem to resist (Salsa verde & sour cream on the side, please). Any way you decide to eat it is great, but we think this recipe with refreshing ceviche is a sure hit.

Spicy Fish Ceviche

It is important to get enough lime juice to cover the fish. Also, be sure to use a juicer that squeezes the juice out of the limes, not one that will tear the membrane of the lime sections since this will make the lime juice bitter.
