Qsine is one cruise ship restaurant that's seriously loco — in the best way possible. The idea behind the whimsical venue aboard Celebrity Cruises, is to take you on a culinary journey that delivers elements of surprise and delight. Before you even get to the food, you are seated in chairs with one arm, while full wine glasses rest on their side in front of you (think: Alice in Wonderland-meets-Top Chef). The menus come on iPads and feature fantastic fusion dishes like Lobster Escargot, Sushi Lollipops, and our personal favorite — the Treseviche, which is a tiny trio of salmon citrus, sea bass, and shrimp and scallop varities that will seriously please your palate. If you've ever celebrated a holiday just for the sake of, well, celebrating, today's your day. It's National Tortilla Chip Day, and we can't think of anything else we'd rather celebrate than the crunchy companion that goes so perfectly with our guacamole, salsas, dips, and below that cheesy beef-and-jalapeno nacho recipe we just can't seem to resist (Salsa verde & sour cream on the side, please). Any way you decide to eat it is great, but we think this recipe with refreshing ceviche is a sure hit.

It is important to get enough lime juice to cover the fish. Also, be sure to use a juicer that squeezes the juice out of the limes, not one that will tear the membrane of the lime sections since this will make the lime juice bitter. Serve with lettuce, avocado, or other cold vegetables on the side. (From recipezaar.com.)
