3 sweet potatoes, boiled, peeled, and sliced
1 cup chopped smoked ham
2 red bell peppers, roasted, peeled, and seeded
5 cups chicken broth
1/4 cup minced cilantro
1/3 cup Mexican crema or sour cream
1/4 cup minced red bell pepper, for garnish
1. In a food processor or blender, puree sweet potatoes, ham, roasted peppers, broth, and cilantro.
2. Pour mixture in a saucepan and warm over medium heat, stirring occasionally. Ladle soup into bowls or a serving dish. Drizzle crema over soup and sprinkle with minced red bell pepper.
