Reader Rosa Sorondo shares her recipe for everyone´s favorite plantain side dish.

INGREDIENTS

4 green plantains

2 cups vegetable oil for frying

2 cups water

2 tablespoons salt

4 garlic cloves, finely mashed

PREPARATION

Peel plantains and cut into 1 1/4-inch rounds. Heat oil in medium-high heat and fry rounds until they begin to turn golden. Meanwhile, pour water, salt, and garlic into a large bowl. Remove plantain rounds and press each one in a tostonera or between two pieces of brown paper. Drop tostones into salted water for 3 minutes. Drain well; return to skillet and fry until crispy. Remove and drain on paper towels. Add salt to taste. Serve hot. Makes 4 portions.
