Tequila Carmel Yams

INGREDIENTS

3 large yams

1/2 cup (1 stick) butter

1 cup brown sugar

1/2 cup tequila

PREPARATION

Preheat oven to 400°F. Wash yams. Place in baking dish and cook, uncovered, 45 minutes or until tender. Let cool before peeling and cutting into thick slices.


 



In small stockpot over medium-high heat melt butter with brown sugar. Add tequila. Boil mixture 2 to 3 minutes to burn off alcohol.



Arrange yam slices in buttered baking dish. Pour tequila sauce over top. Bake, covered, 15 minutes. Makes 8 servings.
