Puré de Papas con Ajo

 (Garlic Mashed Potatoes)

Despite its name, buttermilk is relatively low in fat. It adds a creamy tang to these garlicky mashed potatoes.

INGREDIENTS

3 cups peeled, cubed baking potatoes

1 1/4 cups low-fat, low-sodium chicken stock

1/2 tsp. salt 4 cloves garlic, peeled

1/2 cup low-fat buttermilk

1/3 cup minced, fresh cilantro

PREPARATION

In nonstick pot over high heat, place baking potatoes, chicken stock, salt, and peeled garlic. When chicken stock reaches a boil, cover pot, reduce heat to medium, and cook until potatoes are tender and liquid has reduced. Uncover and remove from heat. With potato masher, crush potato mixture until smooth. Stir in buttermilk, then cilantro. Makes 6 servings.
