INGREDIENTS

3 ripe plantains, baked, peeled, and sliced

1/4 cup butter

2/3 cup dark brown sugar

2 teaspoons vanilla extract

1/2 cup rum

1/3 cup crema mexicana or sour cream

PREPARATION

Make a slit in each unpeeled plantain. Bake in a 375°F oven for 30-40 minutes depending on ripeness. Peel and slice into 1/2-inch rounds. Melt the butter and sugar together in a pan over medium-high heat. Add the vanilla and rum. Cook, stirring, for 2 or 3 minutes, until sauce combines and slightly thickens. Add the plantains. Cook, spooning sauce over plantains, for several more minutes, until heated through. Serve with crema mexicana drizzled on top. Makes 4 servings.
