Papaya and Poblano Chile Salsa

This spicy salsa marries well with mahimahi or grilled chicken.
INGREDIENTS
1/2 papaya, peeled, seeded, and finely diced
1 roasted poblano chile, peeled, seeded, and finely diced
1/4 cup diced red onion
Juice of 1 orange
Juice of 1 lime
1/2 cup chopped fresh cilantro
2 tsp. rocoto paste or chipotle purée, or to taste
PREPARATION
In large bowl combine papaya, chile, onion, and orange and lime juices. Stir well, using your hand or wooden spoon. Let marinate at least 5 minutes but no longer than 15 minutes. Stir in cilantro and rocoto paste or chipotle purée. Serve immediately. Makes about 2 cups.
