New Year's Eve Pasta

Eating black-eyed peas on New Year´s Eve to bring good luck is a Tex-Mex tradition.

INGREDIENTS

4 cups cooked bow-tie pasta

2 cup cooked black-eyed peas

2 cups cherry tomatoes, stemmed and halved

1 small red onion, chopped

1 green bell pepper, chopped

6 ounces crumbled queso fresco

1 cup chopped fresh cilantro

1 cup olive oil

1/2 cup balsamic vinegar

1/4 teaspoon freshly ground black pepper

PREPARATION

Combine the pasta, peas, tomatoes, onion, bell pepper, cheese, and cilantro in a serving bowl. In another small bowl, whisk together oil, vinegar, and pepper. Pour vinaigrette over salad and toss to incorporate. Makes 12 servings.
