Montse's Green Mango

INGREDIENTS
3 lbs. whole green mangos
3 cups sugar
1 tbsp. lemon or lime juice
PREPARATION
Place mangos in large stockpot and fill with enough water to cover. Bring to boil; boil for 30 minutes. They should feel bloated and yield to pressure. Drain water and set mangoes aside. When cool enough to handle, peel skins and then, using knife and hands, remove as much of the pulp as you can into a bowl. In a food processor or blender, pulse the mango for about a minute, until smooth. Put pulp and sugar in saucepan and simmer on low, stirring occasionally with wooden spoon. Stir in lemon or lime juice. Cook, uncovered, 30 minutes. Let cool and refrigerate until ready to use.
