Mexican-style Coffee

Put a Mexican twist on your coffee by infusing it with the essence of cinnamon. It proves to be a pleasant after-meal drink.

INGREDIENTS

3 cups water

4 cinnamon sticks, broken in half lengthwise

3 1/2 tbsp. brown sugar

3 tbsp. espresso or Latin-blend coffee, ground

Cinnamon sticks for garnish

PREPARATION

In pot combine water and cinnamon sticks and bring to boil over high heat. Reduce heat to medium-low and simmer 3 to 4 minutes. Stir in sugar and simmer briefly until dissolved. Raise heat and bring to boil. Stir in coffee and simmer 1 minute. Remove from heat. Let sit 2 to 3 minutes, allowing coffee to steep. Strain and pour into two mugs. Serve with fresh cinnamon stick, if desired. Makes 2 servings.
