Meat-and-Fruit Stuffing

INGREDIENTS

1 lb. lean ground pork

1 lb. lean ground beef

1/2 cup finely chopped onions

1/2 cup raisins

1/2 cup chopped dates

1/2 cup chopped prunes

1 1/2 tsp. capers

2/3 cup olives stuffed with pimientos

1 tsp. salt

1 jar (7 oz.) pimientos, chopped with juice

2 tbsp. olive oil

4 hard-boiled eggs, chopped

1 container (16 oz.) applesauce

PREPARATION

In large bowl add ground pork and beef, onions, raisins, dates, prunes, capers, olives, salt, and chopped pimientos with their juice and mix.


 



In large pot heat oil over high heat. Add meat mixture and stir constantly until meat is lightly browned. Lower heat and cook 10 minutes, stirring occasionally. Add chopped eggs and applesauce and cook 5 more minutes. Remove from stove and allow to cool completely before placing inside turkey. (You can make this stuffing the night before and refrigerate until you are ready to roast turkey.) In covered dish bake leftover mixture alongside turkey 25 minutes and serve as side dish. Makes approximately 8 cups.
