Mango Wedges Wrapped in Serrano Ham with Manchego Cheese Shavings

Sweet and salty is one of our favorite flavor contrasts. Mango with true serrano ham imported from Spain is even more fun and delicious. Serve this appetizer with Albariño wine from the mother patria.

INGREDIENTS

1 teaspoon kosher salt

1 teaspoon paprika

1 teaspoon cracked black pepper

3 trim mangoes, peeled and cut into wedges

10 very thin slices of serrano ham or prosciutto

1/2 pound piece of Manchego cheese, curled with a vegetable peeler

PREPARATION

Combine salt, paprika, and cracked black pepper. Mix well and sprinkle lightly on mango wedges. Wrap a ham slice around each wedge. Arrange the wedges on a platter and garnish with Manchego curls. Makes 6 servings.
