Here's how to duplicate this irresistible dish in your own casa.

Ingredients 

Main Ingredients:

  • 8 Corn Tortillas
  • 8 Large Eggs
  • 8 oz. Corn Oil
  • Prepared Black Bean Puree
  • Prepared Tomato Chipotle Sauce
  • Sliced Scallions to Garnish 

Black Bean Puree Ingredients:

  • 1 Can (15.5 oz.) Black Beans
  • 3 oz, White Onions, chopped
  • 2 oz. Corn Oil 

Tomato Chipotle Sauce Ingredients:

  • 1 lb. Canned Peeled Tomatoes
  • 1 oz. Canned Chipotle Peppers
  • 2 oz. White Onions, chopped
  • 2 Garlic Cloves, minced
Preparation 

Black Bean Puree Prep:

  1. Heat corn oil in a 2-quart pot over medium heat
  2. Add onions to pot, sauté until translucent (about 5 minutes)
  3. Add Black Beans to pot and cook uncovered for 20 minutes, stirring continuously
  4. Add mixture to blender, blend on high until smooth, add salt to taste

Tomato Chipotle Sauce Prep:

  1. ​Heat corn oil in a 2-quart pot over medium heat
  2. Add onions and garlic to pot, sauté until translucent (about 5 minutes)
  3. Add tomatoes and peppers to pot and cook uncovered for 10 minutes
  4. Add mixture to blender, blend on high until smooth, add salt to taste 

Final Prep:

  1. Heat 2 oz. corn oil in a sauté pan over medium heat
  2. Lightly fry whole tortilla on both sides until crispy, dry tortilla on paper towel
  3. Fry egg in same pan sunny side up making sure to leave yolk soft
  4. On a plate layer black bean puree on top of the tortilla, then fried egg, topped with tomato chipotle sauce
  5. Garnish dish with fresh sliced scallions
