 (Coconut Rum Eggnog)

INGREDIENTS

6 eggs

3/4 bottle white rum

2 cans coconut milk (or cream of coconut for a sweeter taste)

2 cans evaporated milk

2 cans sweetened condensed milk

2 tablespoons vanilla

1 cup brandy

PREPARATION

In a blender, beat the eggs and rum at high speed. Lower blender setting and add all additional ingredients. Bottle and chill through. Serve in small liqueur glasses.

Your recipe is good. I made some changes and it tasted better the year after made.... instead of egg you can use canned peaches. put in blender and blend till luiquid. Instead of white rum i used a whole bottle of MALIBU, it gives it a taste that makes you begg for more. added whole cinnamon to the bottles to be poured in. eliminated the brandy. and used 1 can of each mentioned above....tryit you will love it. cano69, November 21, 2008 - 2:42pm
