Warm, melty queso? Sign us up! This Quesadilla Rustica from NYC's newly opened Bodega Negra at Dream Downtown is everything you could want and more from a quesdilla. Rustica cheese mix? Check. Mexican crema? Check. Habenero and jalapeño peppers? Double check. Plus it's entirely open-faced!

Make this restaurant-style quesadilla and you'll feel like you're at Bodega Negra eating Executive Chef Michael Armstrong's delicious creation in-house. Yum!

Ingredients 
  • 1           12" flour tortilla
  • 4oz       Rustica cheese mix (equal parts grated Oaxaca, Chihuahua, Cotija)
  • 1 oz      Goat cheese
  • ½ tsp    Dried epazote, ground
  • 2 tsp     Minced fresh Habanero
  • 6-8        Cherry tomatoes, charred under broiler
  • 2           Tbsp Chimichurri
  • 1           Jalapeños, thinly sliced
  • 2           Tbsp Mexican crema (or crème fraiche)
  • 2           Tbsp Cilantro, chiffonade
Preparation 

1. Toast tortilla on a lightly oiled griddle until charred on each side, let cool to room temperature; tortilla should be crisp and dry
2. Top evenly with cheese mix, then add goat cheese and tomatoes
3. Cook in a hot oven until cheese is melted and finish under a broiler to crisp up the edges
4. Remove and season with epazote and habaneros
5. Slice with a pizza cutter in 6 even pieces, place on round 12" plate, and finish with chimichurri, sliced jalapeno, drizzle crema and garnish with cilantro
