Preparation time

For the dough:

  • 2 packets (1/4 ounce each) active dry yeast

  • 2 tablespoons sugar

  • 1/4 cup olive oil (plus more for brushing)

  • 2 teaspoons salt

  • 4 cups all-purpose flower (plus more for work surface)

To Serve:

  • Sweet onion (or pearl onion), shaved very thin

  • Olive oil

  • Salt

  • 2 ripe Haas avocados, sliced very thin

  • 1/2 Jalapeño, chopped into small chunks

  • 1/2 lime

  • Cilantro leaves (about 1/4 cup)

For the dough:

  1. Pour 1 1/2 cups of warm water into a large bowl, sprinkle with yeast & let stand for about 5 minutes, until foamy or you can stir.
  2. Whisk in the sugar, oil & salt into the yeast mixture. Add flower slowly and stir (easiest with your hands) until a sticky dough forms.
  3. Transfer the dough into another large bowl (that has been oiled), then brush the top with more oil. Cover the bowl with plastic wrap and set aside in a warm, draft-free place.
  4. Allow the dough to double in size, about an hour.
  5. Then, either work into a pizza or store.
  6. Make sure to lightly flour your work surface.

Note: This makes quite a lot of pizza dough. Use only half for your pizza, then wrap the other half in plastic wrap to store in the freezer for up to 3 months.

To Serve:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Stretch the dough out, then scatter some shaved onions. Drizzle with some olive oil and season gently with salt. Cook pizza until lightly charred and golden (about 15 minutes).
  3. Once pizza has cooled a bit, layer on the avocado slices, then sprinkle with olive oil, some salt, the jalapeño and finally cilantro leaves.
  4. Just before serving, squeeze your lime on top of the pizza, drizzling it all over.
