Adobo-roasted Pork Loin

INGREDIENTS
2 lb. pork loin, trimmed of all visible fat
3 tbsp. fresh oregano, chopped
10 green onions, sliced, divided
1 chipotle chile in adobo sauce, chopped
6 cloves garlic, crushed
2 limes, cut into wedges
1/2 cup cilantro, chopped
PREPARATION
Place pork loin into shallow dish and cover with oregano, 4 sliced green onions, chile and garlic. Cover and place in refrigerator at least 1 hour. Preheat barbecue or broiler 15 minutes. Cook pork 25 to 30 minutes, turning periodically, until meat thermometer registers 160°F when inserted into pork. Remove pork from heat and allow to rest about 5 minutes. Slice and serve with lime wedges and remaining sliced green onions. Garnish with chopped cilantro. Makes 6 servings.
