The other night, I found myself debating whether I should eat out or make something for mi misma. Eating out is sometimes more of a hassle than just conjuring up a meal from a variety of foods in my fridge. Having different types of ingredients lends itself to playing around with the various flavors and ending up with a great fusion dish. If your fridge looks anything like mine (I believe in wasting nada!) you, too, can play around and come up with a simple, yet great dinner.

After a five-day tour of the southern region of Spain, First Lady Michelle Obama and her daughter, Sasha, ended their vacation yesterday with lunch at Spain’s royal family retreat on the resort island of Mallorca. King Juan Carlos, who gave a warm welcome to the First Lady by kissing her hand, Queen Sophia, and the fashionable Princess Letizia, greeted them.

The weather right now is stifling in most parts of Eastern U.S., which, for me, means eating and drinking chilly offerings. Hot main entrees are okay; but adding a room temperature or chilled dish will cool down the collective heat. This summer salad fits the bill perfectly.

I have to admit that one of the best things about being Cuban is our cuisine. Recently, a renowned chef and instructor based in Las Vegas sent me a message on Facebook to get my thoughts on food accessibility on my native island.
I sighed and told him that the best place to get the real deal and authentic Cuban food is actually here in the States—not at a restaurant; but rather in a first generation Cuban home. That may sound biased, but from my experience, homemade food always comes with a high dose of true skill, love, nostalgic memories and coveted secret ingredients.

It may sound a bit weird, but I promise you’ve never had anything like this fluffy plantain omelet! If you love sweet plantain, you’ll make this for your desayuno this weekend! The sweetness of the plantain coupled with the airiness of the eggs is a mouth-watering combination. It’s like having chocolate and pretzels. Or chocolate and cotton candy! Or ladies, it’s like when your man pulls your hair back and kisses you softly! (You get the picture!)

If there were one thing I could change about my eating, it would be my sweet tooth. Sometimes, I’ll forgo a meal just to have something dulce. It could be just about anything, no matter how many extra calories it’s bound to contribute to the diet.
