Fig—named after the 100 year old tree sitting in front of the Fairmont Miramar hotel the restaurant calls home—is all about making delicious dishes with the best local and seasonal ingredients. The Fairmont Hotel provides a sophisticated, cool vibe that's perfect for this eatery. The idea at this bistro is to simply enhance the natural flavors of ingredients instead of overpowering them with spices or sauces. They even employ a Food Forager whose job it is to scout out the best ingredients in the region. Latin cuisine can be heavy, but Mexican chef Ray Garcia successfully makes tasty, yet light dishes.
This seasonal bistro with Latin influences immediately welcomes you with cozy earthy tones and splashes of vibrant warm colors like papaya and mustard yellow. It’s no wonder I didn’t mind having breakfast, lunch and dinner here! For brunch my top picks were the Chilaquiles ($18), the heartiness of the chicken, the crispiness of the tortilla, creaminess of the eggs and cheese, and the salsa roja just brought everything all together. Another dish that I enjoyed was the Bacon Waffle a la Mode ($16, bacon stuffed waffles, syrup, bacon ice-cream)—I know it sounds like a heart attack waiting to happen but I loved it! For vegetarians, Fig offers an awesome Veggie Burger $14 (corn, kale patty, cheddar cheese). Because I was in an adventurous mood, I also tried the Torta de Lengua sandwich ($13, braised tongue, tomatillo, radish) and although I was hesitant, it was pretty tasty. On a lighter note, the Fish taco dish $14 (mango salsa, cilantro crema) tasted super fresh and was the perfect poolside meal.
Fig finally managed to make the K.I.S.S. concept (Keep It Simple Stupid) click in my head—at least when it comes to food!
