Ambergris Caye, a small island off the coast of Belize nicknamed named La Isla Bonita, was calling my name on a recent trip I took to the small Central American country. I asked everyone I came in contact with to recommend restaurants on Isla Bonita and Capricorn was mentioned by more than one person as the place to go if you’re looking for seafood. I was staying on the other side of town, so my transportation options consisted of a bike, a golf cart, or a water taxi. Since I’m a true believer in doing the least amount of work possible while on vacation I opted for the boat. Riding though choppy waves in total darkness was kind of scary, I can't lie, but once I reached the shore and spotted the the restaurant only a few feet away I felt relieved.

The laid–back cozy vibe washed over me (OK, maybe the typical Belizean drink, Panty Rippa, had something to do with it) and I found myself totally relaxed after the perilous journey I'd survived. I started off with a simple mixed green salad that came with a tasty homemade vinaigrette and some delicious stone crabs. My boyfriend had the Filet of Snapper for his entree that was seasoned perfectly, allowing the freshness of fish to shine through. The snapper came accompanied by a savory black bean corn salsa (that we both enjoyed) and mashed potatoes,  which weren’t exactly the highlight of the meal. Of course I had to try Capricorn's signature dish, Stuffed Grouper filled with onions, peppers, and a white, cheesy sauce. Although it was very tasty, the combo of the heavy sauce with the meaty fish filled me up after just a few bites. Thankfully I saved room for their homemade Key Lime pie and I was really happy I did—it was the perfect finish to a great night. Until I remembered I had to take that boat ride to get back to my hotel. Yikes!
