About This Recipe 

If you'd prefer, you can use 1 fresh serrano chile (seeded and chopped) instead of the Anaheim. Take care when handling hot chile peppers. Make sure to wash your hands thoroughly with soap and hot water after handling them. Avoid touching your eyes. (This recipe is compliments of elise.com.)

Ingredients 

1 1/2 cups chopped fresh pineapple
1 cup chopped plum tomato (about 2)
1/2 cup chopped red onion
1/4 cup chopped red bell pepper
1 Anaheim chile, roasted, seeded, and chopped
1/4 cup packed chopped cilantro
2 to 3 tbsp. fresh lime juice (to taste)
1 tbsp. olive oil
1/4 tsp. salt

Preparation 

Combine all of the ingredients in a medium bowl.
