DESCRIPTION:

Fresh salsas are a good way to add flavor without a lot calories or fat. A 2-tablespoon serving of this salsa is only 20 calories.

INGREDIENTS:

1 large yellow bell pepper, diced
1/2 cup peeled and diced jícama
1/2 cup chopped scallions
1/4 cup orange juice
1/2 tsp. minced canned chipotle pepper
Pinch of salt
Pinch of freshly ground balck pepper

PREPARATION:

In a medium bowl, combine all ingredients and mix well. Cover tightly and refrigerate. May be stored up to 5 days.
