Wholly Guacamole! This Chicken & Guac Salad is Good!

This half homemade Chicken & Guacamole Salad recipe is perfect for people who want to eat well but have no time to cook. Made with fresh peppers and spices, the half homemade part is the time-saving use of prepared Wholly Guacamole.

And before you go loco over the store-bought guac - we know, guacamole is sacred to any Mexicana worth her sal - consider that a) the prepared guac is made from real avocados and is preservative- and gluten-free, and b) it will save you a solid 10 to 15 minutes of prep, precious time as any busy mom or working woman can attest. 


Wholly Guacamole Dip Chicken Salad

  • 2 tbsp. canola oil
  • 1/2 tsp. salt, divided 
  • 1/4 tsp. black pepper
  • 3/4 tsp. ground cumin
  • 1/4 tsp. sugar
  • 1/4 tsp. Mexican chili powder
  • zest of 1 lime
  • juice of 2 limes, divided
  • 3 chicken breast
  • 1/4 cup red bell pepper, diced
  • 1/4 cup yellow bell pepper, diced
  • 1/4 cup red onion, diced
  • 2 tbsp. cilantro, rough chop
  • 1 cup Wholly Guacamole dip
  • pita, whole wheat bun, or crackers, to serve


  1. In medium bowl, mix oil, 1/4 tsp. salt, black pepper, cumin, sugar, chili powder, lime zest and juice of 1 1/2 limes.
  2. Add and allow to marinate 20 minutes. (Do not exceed 30 minutes.)
  3. Grill chicken 2 minutes per side.
  4. To finish cooking, cook chicken in 400 degree oven 8 minutes. Remove from onion and allow chicken to rest 5 minutes.
  5. Dice chicken. Place in small bowl and toss with bell peppers, onion, cilantro, Wholly Guacamole dip, and remaining lime juiced and salt.
  6. Serve in pita wrap, on whole wheat bun, or with crackers.
