VIDEO: Just In Time for 5 de Mayo Doreen Shares Her Tomatillo Sauce Recipe!

Doreen is back from La Cocina No Muerde to teach us a little bit about tomatillos verdes and share an awesome recipe for a yummy sauce, just in time for Cinco de Mayo!

 

 

I love tomatillos verdes because their beautiful green color can dress up almost any dish. Tomatillos are a vegetable native to Mexico which is why they are also frequently called "Mexican" tomatoes. They are an acquired taste—a little tangy—but they are truly delicious when you roast them with onions and fresh garlic.

I hope you enjoy my Tomatillo Sauce recipe!

Ingredients:
1 pound of tomatillos
½ medium white onion
4 fresh garlic cloves
½ cup of cilantro
Pinch of salt
Pinch of Olive Oil
Avocado (optional for creamy texture)
½ chile without seeds (optional if you like it spicy)

Preparation:

  1. Remove the husk from the tomatillos and clean them with water.
  2. Add tomatillos to a baking tray with onions, garlic, chile. Toss with a little bit of olive oil.
  3. Broil for 15 minutes.
  4. Once they have cooled to room temperature, add all baked ingredients to a blender with the cilantro and salt to taste.

 

TIP: If you add half of a small avocado it gives the sauce a decadent creaminess that I love.

This sauce is perfect on top of a grilled white fish, churrasco (skirt steak), or just the old fashioned way, served chips. ¡Buen Provecho!
