DESCRIPTION:
Reader Rosa Sorondo shares her recipe for everyone's favorite plantain side dish.
INGREDIENTS:
4 green plantains
2 cups vegetable oil, for frying
2 tbsp. salt
4 garlic cloves, finely mashed
PREPARATION:
1. Peel plantains and cut into 1 1/4-inch rounds. In a large bowl combine salt, garlic, and 2 cups water.
2. In a large skillet, heat oil over medium-high heat. Add plantains and cook until they begin to turn golden.
3. Press cooked plantain rounds in a tostonera or between 2 pieces of brown paper, then drop them into salted water for 3 minutes.
4. Drain well and return to skillet. Fry until crispy. Drain on paper towels. Serve hot.
