These Tuna Tacos from The Dream Downtown May Change Your Life

This summer, we discovered one of our favorite new parties in NYC - Sunset Swim Club at The Beach at the Dream Downtown. That night, we also discovered one of our favorite tacos in all of NYC - the Tuna Taco from Dream Downtown's menu. Just take a look at that photo - how could your mouth possbily say no?

Ingredients

Mise en Place 

  • 7 oz tuna loin
  • 1 oz red bell pepper julienne
  • 1 oz yellow bell pepper julienne
  • 1 oz jicama julienne
  • .2 oz cilantro leaves and chiffonade
  • 1 oz scallions julienne
  • 2 oz napa cabbage shredded
  • .5 oz togarashi
  • 1.5 oz taco shell (3 per order)
  • limes
  • olive oil
  • salt & black pepper
  • egg roll wrappers

 

Chipotle Aioli

  • 8 oz mayonnaise
  • 4 oz sour cream
  • 2 oz lime juice
  • 3 oz chopped chipotles in adobo
  • 1 oz minced garlic 
  • salt to taste

Mix all ingredients in the blender on high speed. 

Taco Shells

Use a 4 1/2 inches round ring mold to cut the egg roll wrappers and place them into the taco shell basket, then deep fried at 350* until golden brown.

Guacamole

  • 1 48ct ripe avocado
  • 1 tsp cilantro chiffonade
  • 1 tsp red onion, diced
  • 1 tsp serrano/jalapeño blend
  • 2 tsp chopped tomatoes
  • Half a lime
Preparation
  • Slice the tuna (thin slices)
  • Spread guacamole on all tacos, then make a slaw with the napa, peppers, cilantro chiffonade, jicama and dressed with lime juice and olive oil salt and pepper.
  • Place the slaw, topped with the tuna slices, drizzle chipotle aioli and garnish it with 2 cilantro leaves on each taco.
