Put a little pep into your Thanksgiving table with these tequila-glazed yams.
3 large yams or sweet potatoes
8 tablespoons (1 stick) butter
1 cup packed light brown sugar
1/2 cup tequila
1. Preheat the oven to 400°F. Place yams in a baking dish and roast for 45 minutes or until tender. (Leave oven on.) Let yams cool before peeling and cutting into thick slices.
2. In small saucepan, melt butter with brown sugar over medium-high heat. Add tequila. Boil mixture 2 to 3 minutes to burn off alcohol.
3. Arrange yam slices in a buttered baking dish. Pour tequila sauce on top. Cover and bake for 15 minutes.
