DESCRIPTION:
Don't let all of those leftover tamales languish in the freezer! Give them a new life with this simple recipe. Serve with refried beans and your favorite fresh salsa.
INGREDIENTS:
3 dozen prepared tamales (pork, chicken, or bean), husks removed
2 cups corn kernels, fresh or canned
2 cups shredded queso Chihuahua or Monterey Jack cheese
1/4 cup sour cream
1 can (7 oz.) green chiles
2 tbsp. chopped pimientos
PREPARATION:
1. Preheat the oven to 325°F. Grease 9 x 13-inch baking dish.
2. Place a layer of tamales in baking dish. Top with a layer of corn, then cheese, sour cream, and chiles, and sprinkle with pimientos. Repeat layering. Bake 30 minutes or until mixture begins to bubble.
