DESCRIPTION:

Try this with golden kiwis if you can find them. They are often in season when green kiwis are not. For the dressing, use a neutral oil (such as canola) so the strawberry vinegar can shine through.

INGREDIENTS:

Dressing
1/2 cup oil
1/2 cup strawberry vinegar
2 tbsp. sugar
1/2 tsp. mustard powder
1/2 tsp.paprika
1/2 tsp. salt

Salad
4 cups salad greens
2 cups strawberries, halved
2 kiwifruit, peeled and cubes

PREPARATION:

1. Make the dressing: In a small bowl, whisk all the ingredients together until well emulsified.

2. In a large salad bowl, toss the greens, strawberries, and kiwis together. Lightly dress with dressing and toss. Pass any extra dressing at the table.
