The yummy meatless filling can be prepared 2 to 3 days in advance. If you want to keep this strictly vegetarian, either make your own refried beans or buy a vegetarian brand. Or use plain cooked beans pureed with a little water and oil.
1 cup refried beans
1/4 tsp. black pepper
1/4 tsp. ground cumin
1/8 tsp. cayenne or other chile powder
1 large pita, halved, or 2 small
1 to 2 pickled Anaheim or mild green chiles, seeded and thinly sliced lengthwise
1 1/2 to 2 tbsp. finely chopped onion
2 tbsp. chopped black olives (optional)
Alfalfa sprouts or shredded lettuce
1. In a small bowl, combine, black pepper, cumin, and cayenne. Taste for salt and add some if needed.
2. To assemble, divide the bean mixture beween pitas. Top beans with pickled chiles, onion, olives (if using), carrots, and alfalfa sprouts or lettuce.
