
Ropa Vieja (Shredded Beef)

This super-fast ropa vieja (it usually take almost 2 hours) is made with flank steak in the pressure cooker. Serve with rice or Cuban bread.
5 tbsp. olive oil
2 1/2 lb. flank steak, cut into 1-inch strips
5 garlic cloves, crushed
1 large onion, diced
1 large green bell pepper, diced
1/4 tsp. freshly ground black pepper
1 can (8 oz.) tomato sauce
1 jar (6 oz.) sofrito
Salt
1. In a 6-quart pressure cooker, heat 3 tablespoons oil. Add steak strips and brown a few at a time. Transfer to a plate.
2. Add remaining 2 tablespoons oil to cooker. Add garlic, onion, bell pepper, and black pepper and cook until onion is translucent and pepper is tender. Add browned meat, tomato sauce, sofrito, and 1 cup water. Do not stir.
3. Lock lid and place cooker over high heat. When regulator rotates, lower heat to medium-high and set timer for 25 minutes. When time is up, release pressure by placing cooker in sink under cold running water. Add salt to taste.
