Revoltillo de Camarones y Papas

This coastal Colombian dish can come together really quickly because you use leftover cooked potatoes (boiled, baked, or fried) and prepackaged shrimp. Serve with a fresh green salad.

Ingredients

2 to 3 tbsp. butter or vegetable oil
1 small onion, finely chopped
1 1/2 cups coarsely chopped cooked potatoes
1 cup coarsely chopped tomatoes
1 lb. cooked baby shrimp
1 tsp. salt
1/4 tsp. freshly ground black pepper
4 or 5 large eggs, beaten

Preparation

In a large skillet, heat butter or oil over medium heat. Add onion and potatoes and cook for 1 minute, stirring constantly. Add tomatoes, shrimp, salt, and pepper and cook, covered, to heat through. Add eggs and cook, stirring, until eggs are cooked through, about 2 minutes
