DESCRIPTION:
This easy-to-make dessert will tempt your guests to the table.
INGREDIENTS:
3 ripe plantains
4 tablespoons (1/2 stick) butter
2/3 cup dark brown sugar
2 tsp. vanilla extract
1/2 cup rum
1/3 cup crema mexicana or sour cream
PREPARATION:
1. Preheat the ovven to 377°F. Make a slit in each unpeeled plantain. Bake for 30 to 40 minutes depending on ripeness. Peel and slice into 1/2-inch rounds.
2. In a skillet, melt butter and brown sugar together over medium-high heat. Add vanilla and rum. Cook, stirring, until sauce combines and slightly thickens, 2 or 3 minutes.
3. Add the plantains. Cook, spooning sauce over plantains, for several more minutes to heat through. Serve with crema mexicana drizzled on top.
