A classic--and rightly so. Be sure to get sweetened cream of coconut, not coconut milk or cream. If you're making this with fresh pineapple, cut out little wedges to garnish the edge of the glass.
1/2 cup unsweetened pineapple juice
1/4 cup cream of coconut
1/4 cup light or golden rum
1/2 cup chunks fresh pineapple (optional)
1 tsp. shredded coconut (optional)
1/2 cup ice cubes
In a blender, combine all ingredients and process until smooth. Pour into a tall chilled glass.
