DESCRIPTION:
Just by adding spicy chorizo, you can take scrambled eggs to new heights.
INGREDIENTS:
1 1/2- to 2-oz. piece hard-cured chorizo or other spicy sausage
3 tbsp. vegetable or olive oil
1/3 cup chopped red bell pepper
1/4 cup finely chopped onion
1 medium tomato, coarsely chopped
4 eggs, beaten
Salt
PREPARATION:
1. Halve chorizo lengthwise, then crosswise into 1/4-inch-thick slices.
2. In a large skillet, heat oil over medium heat. Add the chorizo, bell pepper, and onion and cook over medium heat for 1 minute. Add tomato and cook for 1 minute.
3. Season beaten eggs with salt and pour into the skillet. Cook, stirring, for several second to just cook the eggs.
