DESCRIPTION:
This spicy salsa marries well with mahimahi or grilled chicken. Rocoto paste is pureed Peruvian chiles called aji rocoto. You can substitute pureed chipotles.
INGREDIENTS:
1/2 papaya, peeled, seeded, and finely diced
1 poblano chile, roasted, peeled, and finely diced
1/4 cup diced red onion
Juice of 1 orange
Juice of 1 lime
1/2 cup chopped cilantro
2 tsp. rocoto paste
PREPARATION:
In a large bowl, combine papaya, chile, onion, and orange and lime juices. Stir well. Let marinate at least 5 minutes but no longer than 15 minutes. Stir in cilantro and rocoto paste. Serve immediately.
