About This Recipe 
Ingredients 

1 baguette (about 20 inches)
1/2 lb. Manchego cheese
1 large garlic clove, halved crosswise
3 tbsp. high-quality extra-virgin olive oil
Sea salt
2 ripe plum tomatoes, sliced

Preparation 

1. Preheat the oven to 325°F. Cut bread crosswise and on the diagonal into 2/3-inch-thick slices (about 3 inches long). Place on a baking sheet and bake until lightly toasted, 12 to 14 minutes.

2. Meanwhile, slice cheese thinly into triangles so you have at least one triangle per slice of bread.

3. Remove bread from oven and rub garlic on toasted side. Brush with olive oil and season with sea salt. To taste. Top each with a tomato slice and cheese.
