DESCRIPTION:
Eating black-eyed peas on New Year's Eve to bring good luck is a Tex-Mex tradition.
INGREDIENTS:
4 cups cooked bow-tie pasta
2 cups cooked black-eyed peas
2 cups halved cherry tomatoes
1 small red onion, chopped
1 green bell pepper, chopped
6 ounces queso fresco, crumbled
1 cup chopped cilantro
1 cup olive oil
1/2 cup balsamic vinegar
1/4 tsp. freshly ground black pepper
PREPARATION:
1. Combine the pasta, peas, tomatoes, onion, bell pepper, cheese, and cilantro in a serving bowl.
2. In a small bowl, whisk together oil, vinegar, and pepper. Pour vinaigrette over salad and toss to incorporate.
