DESCRIPTION:
This easy and healthy salad is an elegant way to start off a dinner party.
INGREDIENTS:
1 bunch lacinato kale, large stems removed and leaves finely chopped
1/2 can (14.5 oz.) hearts of palm, drained
2 oz. crumbled goat cheese
2 tbsp. fresh lemon juice
1/2 cup extra-virgin olive oil
1 large shallot, minced
Salt
PREPARATION:
1. In a large bowl, combine kale, hearts of palm, and goat cheese.
2. In a small bowl, whisk together lemon juice, olive oil, shallot, and salt to taste. Drizzle vinaigrette on top of salad and toss.
