DESCRIPTION:
Put a Mexican twist on your coffee by infusing it with the essence of cinnamon. It proves to be a pleasant after-meal drink.
INGREDIENTS:
4 cinnamon sticks, broken in half lengthwise
3 1/2 tbsp. brown sugar
3 tbsp. ground espresso or Latin-blend coffee beans
PREPARATION:
1. In a saucepan, combine 3 cups water and broken cinnamon sticks. Bring to boil over high heat. Reduce to a simmer and cook for 3 to 4 minutes. Stir in brown sugar and simmer briefly until dissolved.
2. Increase heat and bring to a boil. Stir in coffee grounds and simmer for 1 minute. Remove from heat and let steep for 2 to 3 minutes. Strain and pour into two mugs.
