DESCRIPTION:

This is a fundamental building block of Mexican cuisine.

INGREDIENTS:

2 cups dried pinto beans
1/2 lb. salt pork
1 large onion, chopped
1 garlic clove, crushed
1 tbsp. chili powder
1/2 tsp. dried Mexican oregano
1/4 tsp. ground cumin

PREPARATION:

1. Soak beans in water to cover by at least 2 inches overnight.

2. Drain beans and place in a saucepan with fresh water to cover. Add salt pork, onion, garlic, chili powder, oregano, and cumin. Bring to a boil, reduce to a simmer, and cook until water is absorbed and mixture is thick, about 4 hours. Correct seasonings if necessary.
