Meat-and-Fruit Stuffing

This makes a hearty stuffing for a roast turkey. The recipe makes 8 cups.

1 lb. lean ground pork
1 lb. lean ground beef
2/3 cup pimiento-stuffed olives
1/2 cup finely chopped onion
1/2 cup raisins
1/2 cup chopped dates
1/2 cup chopped prunes
1 jar (7 oz.) pimientos, chopped with juice
1 1/2 tsp. capers
1 tsp. salt
2 tbsp. olive oil
4 hard-boiled eggs, chopped
2 cups applesauce, store-bought or homemade


1. In a large bowl, combine pork, beef, onion, olives, raisins, dates, prunes, chopped pimientos with their juice, capers, and salt and mix.

2. In large Dutch oven, heat oil over high heat. Add meat mixture and stir constantly until meat is lightly browned. Reduce heat and cook 10 minutes, stirring occasionally. Add chopped eggs and applesauce and cook 5 more minutes. Remove from stove and allow to cool completely before stuffing a turkey. (You can make this stuffing the night before and refrigerate until you are ready to roast turkey.)

3. In a covered dish, bake whatever mixture doesn't fit inside the bird for 25 minutes and serve as side dish.
