This mojo de mango has good mojo.
1 mango, diced
3 tbsp. diced or slivered red onions
1 tsp. minced garlic
1/4 cup cilantro leaves, coarsely chopped
1 jalapeño chile, seeded and finely diced
6 tbsp. mango juice
Juice of 4 limes
1/4 cup olive oil
In a bowl, mix all the ingredients and let the flavors blend for about 1 hour.
