Ham and cheese sandwiches for breakfast...or any time.
1/3 cup milk
20 thin slices white bread
20 sandwich-sliced pickles
10 pieces thinly sliced ham
10 pieces thinly sliced Swiss cheese
5 to 6 tbsp. unsalted butter
3 to 4 tsp. olive oil
1. In a large shallow bowl, whisk together eggs and milk. Set aside.
2. Assemble 10 sandwiches, using 2 slices of pickle and 1 slice each of ham and cheese per sandwich.
3. In a large skillet, melt 1 1/2 teaspoons butter and 1 teaspoon olive oil. Dip a sandwich into the egg mixture and fry until golden brown on both sides. Repeat with the remaining sandwiches, adding butter and oil as needed. Cut each sandwich into 4 triangles or squares and serve.
