Lamb Skewers con Chimichurri

4 Six-inch wooden skewers (soak in water for one hour)
1½ lbs. lamb sirloin
6 Cipollini onions
2 red bell peppers

Chimichurri Sauce:
½ cup olive oil
¾ cup white vinegar
1/3 cup balsamic vinegar
2 tbsp. paprika
3 tsp. cayenne pepper
1 onion, cut into large pieces
1 bunch flat parsley
6 strands of cilantro
1½ tsp. salt
2 tsp. oregano, dried or fresh

Blend a ingredients together. If mixture is too thick, add more olive oil. Remove visible fat from lamb, then cut into 1-inch cubes. Cut onions and bell peppers—remove seeds—into large pieces. Assemble skewers, alternating meat and vegetables. Marinade skewers overnight in half the
chimichurri sauce. Grill skewers until meat reaches desired doneness, heat remaining sauce and pour over lamb to serve. Makes 4 servings.
