How To Go Gluten-Free On a Latin Diet

If you are one of the 3 million Americans with celiac disease (a condition that damages the lining of the small intestine as a reaction to eating gluten) or the millions more who follow a gluten-free diet for other reasons, you may have been one of the people cheering at the FDA's new rules on gluten labeling last week. 

According to USA Today, the Food and Drug Administration has finally chosen a precise definition for what "gluten-free" means when it is found on food labels in stores and supermarkets. The new rule states that any food that is described as "gluten-free" must contain fewer than 20 parts per million of gluten.
