Garlic Lime Chicken

DESCRIPTION:

These are cooked on an outdoor grill, but they could easily be done indoors on a grill pan, or even just in a skillet.

INGREDIENTS:

1/2 cup soy sauce
1/4 cup fresh lime juice
1 tbsp. Worcestershire sauce
3 garlic cloves, minced
1/2 tsp. mustard powder
Coarsely ground black pepper
4 chicken legs (drumsticks and thighs)

PREPARATION:

1. In a measuring cup, combine soy sauce, lime juice, Worcestershire sauce, garlic, mustard, and 1/2 teaspoon pepper. Place chicken in large, sturdy resealable plastic bag. Pour marinade over chicken, close bag securely, and toss to coat chicken well. Place bag with marinade and chicken in refrigerator 30 minutes or more.

2. Preheat a grill. Drain and discard marinade. Sprinkle chicken with more coarsely ground pepper. Grill until cooked through but still juicy.
