This colorful sandwich is nicely flavored with Spanish-style chorizo--a spicy, paprika-infused sausage with a dry and crumbly texture. Peppers and onions round out the flavor.
1 tbsp. olive oil
2 tbsp. finely chopped onion
6 slices (1/2-inch) chorizo
2 tbsp. coarsely chopped green bell pepper
2 tbsp. coarsely chopped red bell pepper
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 eggs, beaten
1/2 baguette, split horizontally, or 4 slices sandwich bread
1. In a large skillet, heat oil over medium heat. Add onion and chorizo slices and cook until the chorizo slices have browned and released their reddish color, 1 or 2 minutes.
2. Add the bell peppers, salt, and black pepper. Cook for another 30 seconds. Pour in the beaten eggs and stir while cooking until the eggs are done.
3. Serve on the baguette (cut in half for 2 sandwiches) or on the sandwich bread.
