Flanboyant Eats with Bren: Potaje de Garbanzos

Chickpeas are one of my favorite beans. They're super rich in protein and fiber, making them a great diet food. This hearty meal will help keep you warm during this wintry weather. Turn a chilly home into a cozy casa with this easy and robust recipe for a garbanzo and chorizo potaje.

Potaje de Garbanzo con Chorizo


    ◦    2 cans Goya chickpeas
    ◦    4 cups water
    ◦    3 tbsp. canola oil
    ◦    1 small green bell pepper, chopped
    ◦    1 small Spanish onion, chopped
    ◦    3 garlic cloves, chopped
    ◦    1 tsp. oregano
    ◦    1 tsp. cumin
    ◦    1 bay leaf
    ◦    1 tbsp. salt (or to taste)
    ◦    2 tsp. olive oil
    ◦    1 chorizo


Add 4 cups of water, chickpeas, salt and bay leaf to medium pot. Cover and cook on medium/high heat for about 10 minutes. While garbanzos are cooking, make sofrito with the canola oil, using all vegetables and all seasonings. Add sofrito and chorizo to chickpeas. Stir well. Cover and cook for another 10-15 minutes on medium-high. Uncover and add olive oil. Stir. Let simmer for 5 minutes. Serve with white rice.
